Oriental mushroom salad by Hans Välimäki


2,0 dl rice vinegar
1 dl water
1–1,5 dl sugar
2 tbsp fish sauce
1 tbsp soy sauce

Stir cold. Add 200–300g diced mixed mushrooms.
Rinse and drain, mix into the marinade.

To finish, add:
Shredded fresh chili
Shredded fresh ginger
Shredded scallions/green onions
Shredded fresh coriander
Mix and check taste.

Works especially well as a side dish with fish, vegetable and meat dishes.
